American South Carp Fish Recipe (with a bow toward LadyKat):

Three (3) days prior to baking the fish, prepare one large oak board, 18" x 18" x 2". Prepare oak board by liberally oiling board with a marinade of 16 oz. olive oil, crush 2 large garlic clove clusters, 6 oz lemon juice, salt and pepper to taste.

Clean one carp, leaving skin, tail and head on, then split in half. Run carp through as many fresh water rinses as needed to 'unslick' the fish.

Set oven at 350 degrees, set timer for 6-8 minutes per pound.

Baste fish with left-over marinade every 15 minutes during cooking.

Baste fish every 5 minutes during the last 1/2 hour of cooking.

When done, remove from the oven and let stand for 15 minutes.

To serve, carefully throw away the carp and eat the oak board.
